Black summer truffles are always less potent than highly prized winter black truffles. However, if you’re tasting them raw you aren’t enjoying them at their full potential.

Summer truffles actually need to be very lightly cooked to awaken the full potency of their flavor and aroma. Slice them or chop them as called for in your recipe, then lightly sauté them or heat them in oil before adding them to food.
