What is “aroma” on ingredient lists?

Because our Italian foods are usually packaged and labeled in Italy for international sale, they often use European or Italian terms for ingredients.

The word “aroma” on truffle oil, lemon-pepper wheat germ pasta and other Italian products’ ingredient lists is the equivalent of “flavor” on American-style ingredient lists.  It’s simply their term for the essence of an ingredient.  Thus, when you see “truffle aroma”…just think “truffle flavor.”
