I would recommend removing your white truffles from their box and storing them in your refrigerator – here are some storage tips.

Your truffles should arrive pretty clean, but as to washing them, I would recommend instead doing what many chefs do – brush them off with a dry brush to remove any clinging dirt.  If you rinse the truffle and don’t use the whole thing, it’s possible that residual moisture could damage it in your refrigerator.

Here are some basic usage tips to get you started.

As to our favorite pasta recipes, my recommendation is to keep things very simple.  When you’re working with one of the most prized ingredients in the world, you don’t want anything to get in the way!  I would cook a long strand pasta like fettuccine, linguine or pappardelle, then toss the hot (drained) pasta with butter and/or extra virgin olive oil.  Toss or top with Parmigiano Reggiano Cheese (use the good stuff for this…not American “parmesan”), then shave some truffle over the top and let the hot pasta awaken their aroma.
