Black truffles should be washed before slicing, right?

Like so many beliefs & practices surrounding the harvest, storage and use of fresh truffles, there may be a difference of opinion in the culinary industry…but we recommend washing them under cold water, then drying them off before slicing, cooking or serving.

Because washing truffles can introduce moisture that shortens their shelf life, we recommend only washing them right before you use them, not well in advance.
