Can you store leftover horseradish for later use?

Absolutely!  10lbs is a lot of fresh horseradish, but fortunately it stores well.

Wrap horseradish roots in damp paper towels in zip-top bags in your refrigerator.  Check them occasionally and cut off any parts that are starting to spoil, and they should last for up to several weeks.  If you grate your horseradish and pack it in vinegar (Marx Family horseradish recipe), it will last for several months in the refrigerator.
