Can you store dried mushrooms by vacuum pack without freezing?

You can absolutely vacuum pack dried mushrooms for storage.  It’s worth noting that they’re very well preserved already though (preserving their flavor for a year or longer in an air-tight bag), so most people find doing so unnecessary.  They certainly don’t need to be frozen.

The only potential problem is that vacuuming the bag may crush delicate dried mushrooms (like dried bamboo mushrooms) or break the stems off others (like candy cap mushrooms), but most varieties will probably be fine.
