    The sunchokes you have pictured are absolutely not the standard variety of roundish, knobby tubers. Your picture depicts either the ‘Fuseau’ or ‘Rover’ variety that is longer, no knobs and easy to clean and slice. There is a huge difference in the standard variety and the others.

    We hadn’t appreciated the subtleties between varieties. As far as we can tell, sunchokes sell anonymously on the wholesale markets … the ones pictured are from the product that we pulled as samples, but the varieties may change over time. Sounds like we should find some knotty ones and photograph those as well. Thanks for pointing this out!
