How would I can alligator meat?

We haven’t tried canning alligator meat, so we can’t speak from experience.  The only source of information I’ve been able to track down online is a scientific paper entitled “Thermal Process Studies of Alligator Meat”.  It may offer some clues to get you started – but the people conducting the study appear to have been more concerned with the feasibility of alligator meat canning (and the effect of the process on the meat) than discovering the best process.
