Can I freeze fresh ghost chilies?

We haven’t tested freezing fresh ghost chilies, but you should be able to do so.  We’d recommend removing their stems and following these freezing tips.

Just keep in mind that their texture (and likely appearance) won’t be the same – they’ll likely be mushy once you thaw them.  We assume thawed chilies would be ok for use in sauces, purees, braises, etc…but they probably won’t be as good for fresh or lightly cooked applications.

Drying them (using a dehydrator) might be a better option.

In any case, remember to be very careful when handling ghost chilies.  Wear gloves and wash anything the chilies touch in your kitchen…they’re crazy hot!
