Can you freeze mussels in their shells?

There’s a fair amount of conflicting info on this.  We think you’ll better preserve their quality by freezing the mussel meats out of their shells and generally recommend doing that instead.  They’ll freeze faster, have less contact with air during storage, and require less work when they come out of the freezer.

Frozen in-shell mussels will likely cook differently than fresh mussels too, you probably won’t be able to use the traditional guide (when the shells open) to gauge doneness, as the mussels will already be dead.
